Safari 97 is a family-owned specialty coffee company in Calgary, Alberta, Canada, run by brothers Joe and Shem Thiongo. We source directly from Kenyan farmers and the Nairobi Coffee Exchange, roast in small batches, and write tasting notes in plain language.

How we describe coffee
Every bag gets one plain-language sentence (what it tastes like) and three single-word tags: First Sip, Middle, After. No cupping jargon. Words you would use standing at a kettle, not a cupping table.
